Overnight Strawberry-Mascarpone Strata

76b3bdb0-0e20-49ab-90fb-54187c1f8884_zps55061966Back in college, I remember watching this movie called “The Family Stone.” There was a scene where Sarah Jessica Parker, playing a woman desperate to make a good impression on her potential future mother-in-law. (We’ve all been there!) In her attempt to appear domestic, she makes this beautiful breakfast strata, with perfectly cut out pieces of bread in the shape of stars. It was a work of art. Then, as she is moving it to the oven in the morning, the uptight city-girl dumps the whole thing on herself! Priceless! I remember watching that scene and thinking “That was a beautiful strata.” I guess that was one of those signs that I see all things through a lens of food.

This is my take on a brunch classic, with a sweet twist. Sugar Free syrup adds sweetness without extra sugar, while fat free evaporated milk gives richness without fat. Fresh Strawberries and sweetened Mascarpone cheese need no explanation. They are just scrumptious!

Overnight Strawberry-Mascarpone Strata

Ingredients:
1/2 lb. Baguette (or other crusty bread), Cubed
2 cups (1lb) thick sliced Strawberries
1 8oz. Package of Mascarpone Cheese
1/4 cup Sugar
4 Eggs + 2 Egg Whites
1 cup Fat Free Evaporated Milk
1 tbs Brandy
3 tbs Sugar Free Maple Syrup
2 tbs Unsalted Butter, melted
Baking spray
2 tsp Powdered Sugar per serving, Optional
 

Method:

  1. Spray the bottom of a 10″ cake pan with baking spray.
  2. Layer the bottom  of the cake pan with 1/2 of the bread cubes into a single flat layer.

4.  Using a truffle size ice cream scoop, or two spoons,  layer the sweetened mascarpone over the bread cubes.3fca169f-2cc0-4f4a-90e8-58e294ea3f46_zps8cba8992

5.  Lay the sliced strawberries over the mascarpone, pressing them down in order to help spread the cheese across the entire cake pan.527f7099-ed20-4a1a-b6f7-23e5ca4ecbed_zps95104cb56.  Top berries with the remaining half of bread cubes. Set aside.

7.  In a medium bowl, whisk together  Whole Eggs, Egg Whites. Be sure to break up the eggs very well.

8.  To the eggs, add Evaporated Milk,  Brandy, and Sugar Free Syrup. Whisk well to combine.ecfe10db-beec-4ea7-adf2-9f2ea041b6b9_zps26ec1a56

9.  Whisk in melted butter, stirring constantly.

10. Pour Egg Mixture over the layered bread cubes. Cover with plastic wrap, and refrigerate overnight.a9a95bc1-26ce-4671-9893-455783a9e6fd_zpse361c8d3

In the AM:

  1. Pull cake pan out of the refrigerator, and let it sit on the  counter for 15 minutes. Preheat oven at this point to 375⁰.
  2. Loosely cover cake pan with foil, and bake for 30 mins.
  3. Remove foil, and bake an additional 30 mins.
  4. Remove from oven, and allow to sit for 15 minutes before serving.
